Yes, with the Interrail France Germany Pass, you can change your departure date on the Rail Planner App any time before the start of your first travel day (00:00 CET). If you activated a travel day on the app, you can simply cancel and reschedule this date. If a travel day has started or passed, however, you can only change the dates of travel days that haven't started yet.
